Have a good Sunday !



We have strawberries on menu today ! Again. But this winter has been so long that as the sun is out now I need to have fresh and flavory food to remain myself that yes, there we are, spring is here.
I've hide them into pie puff pocket with delicious home-made lemon curd and it has been a perfect sunday morning breakfast.
Meanwhile, I feel so creative at the moment with full of DIY ideas in my head... see bellow for a sneak peek of one them !
Oh, and I also stumbled into amazing shoes so if you guys can help me founding their brand it would be awesome.

Sunday Recipe

Lemon curd & strawberries pocket.

Pocket:

1 pie puff pastry
Some fresh strawberries
1 egg yolk for lustring

Lemon Curd* :

120 gr sugar
2 lemons
2 eggs
150 gr soft butter



* Make the lemon curd at first.
* Start peeling the lemons.
* Put the peels with sugar in a big bowl and gently combine with your fingers.
* Add the eggs and beat with a whisk.
* Squeeze the lemons and add their juice into the peels/sugar/eggs mixture. Whisk.
* Filter the mixture thanks to a strainer and pour it into a pan.
* Bring some water to simmer into a large pan and put the one with the mixture in it.
* Cook thanks to this bain-marie your lemon curd whisking constantly for 4 minutes or until the lemon curd starts thicken. It's ok if at this stage the lemon curd is not thick as it should be, it will thicken while cooling down. Be careful not warming your lemon curd more than 5 minutes or you will cook the egg white and overcook the lemon curd !
* Allow to cool down for at least 10 minutes.
* Add the diced soft butter and mix until creamy and smooth.
* Pour the lemon curd into a jar (or hermetic container) and set in the fridge.

* Preheat your oven on 210°C.
* Falt down the pastry puff and cut the curved sides to have a square.
* Cut the pastry into 4 equals stripes both into length and width to make 16 squares.
* Pour a teaspoon of lemon curd and small strawberries pieces every other squares.
* Cover each filled square with remaining puff pastry squares.
* Press the sides with your fingers or fork (lightly floured if needed).
* Whitewash the top of each pocket with egg yolk and bake for 5 minutes or until well golden.

Serve warm or cold !


Lemon Curd*

- You can keep the lemon curd up to 5 days into the fridge.
- You can also use this lemon curd recipe to make a lemon pie. If so, double ingredients quantities. You will just have to fill a pre-baked pie shell and to place on the fridge few hours to allow the lemon curd to thicken.
